RED CURRANT BEHAVIOR IN COOLED AND MODIFIED STORAGE

Abstract

Red currant was evaluated during cold storage, at, 1°C and 95% HR, in normal and modified atmosphere, using split-plot design with five repetitions. Fruit quality was evaluated after 13, 23 and 37 days of cold storage, and it was repeated after exposing them by 48 hours to room temperature. Weight loose was reduced with the use of plastic covers of PVC. After 23 days of storage in cold camera a high incidence of decay in the fruits dealt with modified atmosphere. The fruits that maintained better quality during the storage were those under a PVC film, Europla. Fluctuations of temperatura in the storage (15ºC) deteriorate the product.
